Simple Double Baked Potatoes

Ingredients 5 large potatoes 3 tablespoons vegetable oil 3 tablespoons olive oil 3-5 tablespoons of butter (thin slices or melted) Salt & pepper (to taste) Grated cheese Method: 1. wash and thoroughly dry potatoes 2. glaze with vegetable oil 3.slice potatoes taking care to not reach all the way to the bottom (you can insert tooth picks on the along the bottom of the potato to help you avoid cutting all the way down, then removing them once you’re done 4. place potatoes on an oven pan ( line with parchment paper for added insurance that you’re potatoes won’t stick) 5. Drizzle the olive oil & salt 6. Cover with aluminum foil & bake for 20-25 min @ 400 degree Fahrenheit, after the 20-25 minutes, remove the aluminum foil and add the butter, if melted simply drizzle it on top each potato and if not, make sure to cut it into thin slices and place them in between some of the slices of the potatoes. And no, you do not have to place a thin piece of butter in between each slice 7. continue to bake potatoes until a knife can be inserted into them smoothly 8. once cooked, remove from oven & add desired topping, you can add oregano or any other herbs that you like too 9. I added some more salt, pepper and cheese and I grilled the potatoes just until the cheese melted. 10. Take out let cool a bit and serve while warm. I served mine with fish nuggets and a spinach, raisins, fita cheese, almonds and tomatoes salad. These potatoes are perfect meals on their own and make awesome side dishes too. Bon Appetite!
